Ingredients:
- 1/2 small onion, chopped
- 2 cloves garlic, minced
- 2 cup black beans or 1 15 oz can (without BPA), drained and rinsed
- 1 cup frozen corn, thawed
- 8 cherry tomatoes, quartered
- 1/2 cup diced red pepper
- 1/4 cup chopped cilantro
- 2 TBS extra virgin olive oil
- 3 TBS fresh lemon juice
- salt and black pepper to taste
- Mix all ingredients together, except the cilantro, and refrigerate. The longer you allow it to sit, the better the flavours will blend together.
- Just before serving, gently stir in the cilantro.
- Makes 4 servings.
